French Silk Pie

Ingredients
Crust:
24 sandwich cookies
5 tablespoons salted butter, melted
Filling:
4 ounces of unsweetened baking chocolate
1 1/2 cups sugar
2 sticks salted butter, softened
4 large eggs
Whipped cream, for serving (optional)
Directions

For the crust:
Preheat the oven to 350 degrees
Place cookies in a bag and crush until fine. Add crumbs to a bowl and mix in butter until evenly combined. Press crumbs into the bottom of a pie pan and bake until set, about 5 minutes. Let cool.
For the filling:
Melt the chocolate in the microwave. Set aside to cool.

In a mixer with a whisk attachment, beat the sugar and butter until fluffy, about 2 minutes. Drizzle in the melted chocolate and add the vanilla. Beat until combined.
Turn the mixer to medium speed and add the eggs one at a time, leaving about 5 minutes between each egg addition. Once well mixed, pour the pie filling into the crust. Smooth and place in the refrigerator for at least 2 hours. Serve with whipped cream.
